After a year of work tending the vines throughout the four seasons, the long-awaited moment of the grape harvest arrives. Choosing the harvest date for each plot is an especially important decision in order to harvest quality grapes at the optimum ripeness, aspiring for high quality and balanced wines.

At Castillo de Aresanthe grapes are harvested and vinified following a strict plot selection, which means that each plot is harvested and vinified separately to preserve the tipycity and character of each grape variety. For the vinification of our white and rosé wines, cold stabilisation is used, which consists of cooling the musts before vinification to preserve the maximum aromatic potential of each wine. For our red wines, a cold pre-fermentation maceration of the grapes is opted for in order to obtain a beautiful colour and extract the maximum potential of the fruit, while preserving freshness. In our winery, traditional and more modern techniques are combined in the vinification techniques. Our oenologist and her team carefully supervise each stage of the winemaking process. Ensuring the quality of a good wine is our priority.
